Let's Make Pumpkin Muffins!

Here's a simple recipe for making delicious pumpkin muffins:

Ingredients:

  • 1 3/4 cups all-purpose flour OR 1/2 oat flour/1/2 all purpose for higher protein
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • Optional: chopped nuts or chocolate chips

Maple Glaze

  • 1/2 cup organic powdered sugar
  • 2 tablespoons maple syrup - Any brand will do but we use Vermont Maple Syrup!
  • 1 teaspoon vanilla extract

Instructions:

Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.

In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.

In another bowl, mix the sugars, butter, eggs, pumpkin puree, and vanilla until well combined.

Add the wet ingredients to the dry ingredients and stir until just combined. Fold in nuts or chocolate chips if using.

Divide the batter evenly among the muffin cups.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Mix ingredients for glaze and pour over warm muffins! Enjoy!
